We’ll learn culinary, medicinal and First Nation traditional uses of the most nutritious veggies on the planet. Highlights will include noshing on kelp-robed salmon, sea bean sauté, sea veggie soup and chocolate ocean mousse pie—thickened with carrageenan-rich seaweed!</span><span style="border: 0px; font-family: inherit; font-style: inherit; margin: 0px; padding: 0px; vertical-align: baseline;"> </span><span style="border: 0px; font-family: inherit; font-style: inherit; margin: 0px; padding: 0px; vertical-align: baseline;">On Sunday, we’ll head to the forest to identify edible plants and, where appropriate, sustainably harvest for cooking up curried nettle soup, wild greens pesto, Nootka rose vinaigrette salad and juniper truffles.</span></div>

Jennifer is embarking on a MA degree in Environmental Studies at Huxley College of the Environment, Western Washington University! She is researching contaminant levels in Salish Sea seaweeds. Working with Washington Tribes and British Columbia First Nations to select beach sites and harvest seaweeds, she is checking both "pop weed" (Fucus) and bull kelp (Nereocystis). The Salish Sea Seaweed Garden has been a source of food for 1000s of years. As people return to traditional foods, it is essential they know if the foods are contaminated by chemical pollutants. Stay tuned! Results will be analyzed in the Winter/Spring of 2016. Oceans of thanks to UC Davis/Sea Doc Society (the generous funders) and the Border Policy Research Institute at WWU (also a wonderful funder), and the many First Nation and Washington Tribes who have generously contributed scientists, boat drivers, boats and their vast knowledge of the Salish Sea! Raised kayak paddles to Shannon Point Marine Center and staff for their kind lab support and giant freezer!<br />

It is used in the treatment of diabetes, especially adult onset insulin resistant diabetes...reportedly reducing the craving for sugar as well as the elevated blood glucose levels. In large doses it is emetic (causes vomiting) and purgative. The root bark boiled in oil and used to treat psoriaisis worked better than hydrocortisone in one study. Like all the ginsengs it is an adaptogen, balancing the stress response and stabilizing the body. The main thing for quality control’s sake is to buy the best bittersweet chocolate you can find—such as Callebaut or Varhona with 50% cocoa solids. The best places to get such quality chocolate is from a chocolatier that sells bulk chocolate. You can make ganache the night before, so it can solidify in the fridge, and be ready to roll into bite-sized morsels the next day.</div>

1 / 2 cup organic heavy whipping cream<br />
1 / 4 teaspoon vanilla<br />
9 ounces bittersweet organic chocolate (chopped in walnut sized pieces)<br />
1 1 / 2 ounces organic unsalted butter (room temperature)<br />
2 tablespoons of Bombay Saphire Gin<br />
3 dozen (1/4 cup) common juniper berries (available in bulk at many spice stores and food co-ops)<br />
1 / 2 cup unsweetened organic cocoa powder (sifted)<br />

Bring cream, juniper berries and vanilla to boil. Turn off heat. Add chopped chocolate. Stir or whisk till smooth. Set aside.<br />
<br />
Cool mixture to warm then stir in room-temperature butter. If you add the butter when the chocolate mix is too hot, the oils will separate. Add Bombay Sapphire Gin. Pour intoa glass baking dish. Cover with aluminum foil and chill in fridge until solid—about 1-2 hours.<br />
<br />
Set out two cookie sheets lined with wax paper and a bowl with unsweetened cocoa.<br />

Run a chilled melon ball scoop across the top of the solidified ganache to make a rough ball the size of a walnut. Push one juniper berry into the center of the ganache and roll it into a round ball. This can be a sticky job if you have warm hands that melt the chocolate. I wash my hands every ten minutes or coat them in cocoa to keep the ganache from sticking. If the ganache becomes too soft to handle, return it to the fridge or freezer again for a few minutes.<br />

Description: An evergreen shrub with shape-changing versatility. It can sprawl in shoulder-high mats, salute the sun as a 50-foot-tall columnar tree, or, shrink into a lowly dwarf shrub in the arid tundra. No matter, it can live for 170 years. Bark: Reddish-brown, thin and scaly, it falls off in strips. Leaves: Needle-like at first, turning into blunt scales with age; grow in whorls of three.<br />

Harvesting with a Gentle Hand: Gather ripe berries for culinary use when they are dark blue. Small sprigs of branches can be harvested anytime, but be conservative, juniper tends to regenerate and grow slowly.<br />

Caution: If you aren’t sure of the species of juniper berries you are collecting, don’t cook with them! Some are bitter. One species, Juniperus Sabina is toxic. Juniper extract, used externally for rheumatoid, bursitis and muscle pain is anti-inflammatory. (Think of pine and juniper bath salts.) However, don’t cook with common juniper oil—which is very concentrated—since even small does can be fatal internally. Some people get itchy dermatitis from touching juniper — be prepared, don a pair of gloves for serious harvesting. As well, pregnant women should not consume juniper berries because the berries stimulate the uterus.<br />

I’d been bushwhacking up a stream, swatting at no see ums, when I broke into a clearing of indescribable beauty. Velvet pillows of moss and bonsai shore pine framed a pool of yellow pond lilies reflecting blue sky. Claude Monet could have painted his famous Water-Lily Pond canvases in this wilderness Eden. I lay down on the inviting moss to admire the view. A moment later I jumped upright again.<br />

I’d been bitten—or so I thought. I checked the impression where my back lay for a spider or centipede. Finding nothing, I pressed my palm into the culprit spot. Immediately a porcupine prickle pressed back. Tendrils of juniper boughs had worked themselves into the moist fissures under the moss from a nearby bush. Or maybe the moss overtook the juniper? Either way, I’d lain down on an invisible pincushion. Appropriately, the people of Haida Gwai called this aromatic shrub “swamp boughs” because it thrives in bogs. <br />

</tbody></table> Common juniper is so common it is the only evergreen that circles the northern hemisphere. Prized across Europe for its edible berries (actually not berries at all—but round cones), it is one of the few “spices” to evolve in the cold, northern climates. Juniper berries take 2 years to ripen. So you’ll often find both ripe and unripe berries on the same bush.<br />
<br />
If you pop a dark, ripe berry in your mouth, it tastes bittersweet and peppery with a hint of pine. Juniper harbors a volatile oil called terpinen-4-ol that gives it a distinct evergreen note. It is the ripe berries--the color of blue-black raven feathers--that are crushed for culinary use.<br />
<br />
Green, unripe berries are preferred for flavoring Gin. The word gin is short for genievre-- or juniper in French. First distilled in Holland during the 1600s gin was drunk as a tonic to aid digestion. Medicinally this matches up. For centuries juniper has been prescribed to treat flatulence, gastrointestinal ailments, and sooth common stomach indigestion. First cultivated in 1560, juniper’s use as medicine was first penned on Egyptian papyrus dating at 1500 B.C. Closer to home, the Inupiat people traditionally downed one juniper berry a day to prevent flu. The Tsimshian pounded a poultice of branch and berry for wounds.<br />
<br />
Harvesting juniper berries is a prickly ordeal. I’d recommend gloves or judicious plucking. After all, you don’t need much for a sauce—5-8 ripe berries—since juniper is a potent flavoring. Historically, in Europe, peasants gathered juniper berries by spreading a cloth under a bush and beating the boughs to remove the fruit. They were further sun dried before storage. If you buy whole berries at a spice shop, they’ll be shiny black and a pinch bigger than a peppercorn. The smoky bloom will have worn off from handling. <br />

First cultivated in 1560, common juniper is a valued ornamental. In the wild it is a pioneer plant—arriving first to disturbed sites and quickly stabilizing the soil. Many animals depend on common juniper for food and cover. American robins, black-capped chickadee, Bohemian waxwings, wild turkeys, and red fox gorge on cones. Mule deer, mountain goats, moose, white-tailed deer, caribou and rabbits all browse on common juniper when pickings are slim. The prickly fortress of branches provides nest cover for wild turkeys, winter roosts for short-eared owls, and building materials for wood rat nests.<br />

Foraging for mushrooms, huckleberries and wild greens helped Jennifer Hahn, lighten her backpack while hiking 1090 miles on the Pacific Crest trail. During her solo kayak trip from Alaska to Bellingham, Hahn, a Bellingham wilderness guide, writer and teacher, supplemented her pre-packaged dry grub with fresh wild foods. Harvesting salmon, urchin, limpets, berries and sea vegetables--kept her kayak trim and manageable. <br />
The adventurous locavore was thrilled when Skipstone Press asked her to write a book about northwest wild food.PACIFIC FEAST: A Cook’s Guide to West Coast Foraging and Cuisine is Hahn’s second book. It’s a delicious blend of 65 northwest chef recipes, field notes, color photos, illustrations, and 20 essays describing foraging adventures along coastal rain forests, beaches, mountains and, even, her own back yard.<br />
“Today, there’s a renaissance in local-grown and wild-foraged food sweeping the country,” Hahn says. “When it comes to eating within your own foodshed, wild food is as local as it gets. It doesn’t get closer than, say, the distance of a salal berry bush to your mouth—or a clam to your bucket.”<br />
“This is the real thing--the unadulterated bite,” says Hahn. “Plus it offers earth-to-fork bold flavor and a nutritional powerhouse.”<br />

Of course, Hahn will be the first to admit, we can’t all go out and live like Daniel Boone or subsistence hunters in the outback of wild Alaska and British Columbia. However, we can harvest wild foods in a way that conserves the abundance for generations to come. It was with this in mind that she and photographer Mac Smith carefully selected the wild foods in PACIFIC FEAST and included carefully researched “Sustainable Foraging Guidelines.” <br />
Using Monterey Bay Aquarium’s Seafood Watch Program; the Marine Stewardship Council guidelines; USDA Plant Datebase; the David Suzuki Foundation’s recommendations; First Nation traditional ecological wisdom; and other conservation-oriented experts such as Tom Mumford of the DNR, mycologist, Fred Rhoades, rare plants botanist, Katy Beck, and herbalist / forager Linda Quintana—to name a few local resources—Hahn and Smith came up with a list of 50 delicious wild foods.<br />
“These are foods we love to harvest, too. The wild and weedy greens, berries and roses, trees and ferns, mushrooms, shellfish, and seaweed that inhabit our kitchens.”<br />
One glance in Hahn’s freezer reveals her passion as a foraging gourmet: sautéed oyster mushrooms and chanterelles “for pizzas and omlettes,” diced horse clams and butter clams “for risotto and chowder,” fiddlehead fern “for relish and tempura,” nettle pesto, and carrageen-rich Turkish towel seaweed “for thickening a ‘Chocolate Ocean Pudding.” Hahn says it rivals truffle ganache. Her pantry boasts Mason jars of roasted dandelion root “for churning into coffee-flavored ice cream,” dandelion wine, spruce-tip syrup, Oregon grape jelly, and sweet kelp pickles. I was a one-pot camp cook until I learned from so many talented and passionate chefs.<br />
Of the 65 chefs and foragers in Pacific Feast, a delicious handful hail from Whatcom County eateries including: Ciao Thyme, Pastazza, Nimbus; Fool's Onion Catering, and Willow’s Inn--along with celebrity chefs such as Chez Panisse' David Tanis, Vancouver, B.C.--C Restaurant's Executive Chef Robert Clark, Tilth's Maria Hines, and The Herbfarm/Poppy's Jerry Traunfeld. IMPORTANT KELP HARVESTING NOTE: In Washington state you need to buy an annual Shellfish & Seaweed Harvest License to harvest kelp. It is illegal to cut bullwhip kelp stipes (stalks) in WA state because it kills this important species outright. You CAN cut leaves…24 inches from the bulb or more. Look for bullwhip kelp stipes washed up on a beach or floating. Harvest only from clean environments. When kelp is found floating or as flotsam, you don’t know the source. In polluted areas, kelp is a magnet for heavy metals…so it is better to find “floaters/beached kelp” on an open Strait or the open coast. Don’t harvest near towns/industrial sites/bays with moored boats, etc. A fresh stipe is firm like a rubber garden hose and uniformly brown--with no mushy spots from sun or rain exposure.<br />

Imagine O-shaped amber pickles with a honey sweetness and lively tang reminiscent of chutney--like the bread and butter pickles Great Aunt Grace made. Now imagine making them from a bull whip kelp horn. After fall and winter storms you can often find tangles of kelp beached in drifts. Cut off the tip-top of the bulb (where blades attach) so it is funnel- or bell-shaped. Cut the tapered end off so the opening is a half inch across. Pucker your lips and blow…. When you’re done playing, cut into pickles! <br />

(Any size hole is fine though. And the bulb can be sliced into crescents and pickled, too.) </div><div style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;"><br />

Remove skin with a potato peeler. PICKLE CANNING NOTE: If you plan to preserve pickles by canning, cut </div>the kelp stipe o-rings wider--1/4 inch thick, so they hold up over time. Soak in a large pot in brine for 2 hours, stirring several times. Heat and bring to a boil for 5 minutes.<br />

</tbody></table> We coastal folk, from Alaska to California find bull kelp endearing, inspiring, frightening, sexy, mysterious, whimsical, and mythic. Not to mention, for those who have dared invite it into their kitchens delicious, nutritious and remarkably mucous. Hands down, bull kelp has more uses than any seaweed I —know. Here are just a few:<br />

Before glass and plastic bottles, the First Nations used hollow kelp stipes for storing oolican fish oil or fresh water on canoe journeys. After European traders arrived, kelp “bottles” transported molasses from ship to shore. The hose-like bottles were cured by many methods. Every coastal group had their secrets: smoking over a fire, soaking in fresh water then drying, rubbing with whale and dogfish oil, and so on. The bell-shaped kelp bulb, cut off at top and bottom, became a handy funnel for pouring oil into a cured tube. Full kelp bottles were corked and lashed shut, coiled like rope, and lay in a cedar storage box. Some were slung over the longhouse rafters ready for quick use. A cook could reach over, uncork the kelp bottle, and dribble fish oil into waiting feast dishes like you might some expensive salad dressing. <br />

</tbody></table> Kelp is the hula dancer of the deep. It has an extremely flexible stipe or stalk that hulas with each passing wave. Scientists recently discovered bull kelp has a built-in mechanism that allows it to “go with the flow.” Cellulose fibrils in the cell walls are angled at 60 degrees to the stipe axis allowing it to sustain tremendous “crack the whip” motion caused by waves. <br />
<br />
First Nation people who traversed the coast by dug-out canoe knew how to deal with kelp beds. Like sea birds and otters they rafted up to ride out storms. Huge kelp beds iron out stormy seas. By laying out a criss-cross network of leaves and stalks, kelp creates its own surface tension. It literally carpets the waves. After a gale subsided First Nation paddlers used their ingenious bow paddles—sharpened on one edge like a knife--to slice kelp stipes out of harm’s way. <br />
<br />
When I am kayaking between beaches on surf-pounding coasts I follow the old navigator’s ways. I raft up in a kelp bed to eat lunch—and sometimes to journal and sketch. Tossing a few kelp stipes over bow, I have a sturdy, if not dripping wet natural anchor. Best thing is, I don’t have to carry the anchor with me when I go. I simply throw it overboard. Part two of this exciting species will include one of my favorite manners of preparing the stipe to accent any sandwhich with a coastal flair.<br />
