WILD TIDE DINNER & fund-raiser for SEATTLE INDIAN CENTER FEB 18, 2026

Hi friends, I am honored and delighted to invite you back to the table on Wednesday, February 18th for the reconvened WILD TIDE dinner! My partners--Slow Food Seattle, Seattle Culinary Society, Chef Kären Jurgensen, Finnriver Farm & Cidery, and Taylor Shellfish--are THRILLED to offer this delicious evening as a FUND-RAISER for SEATTLE INDIAN CENTER.
For our evening, Chef Kären has planned 13 dishes celebrating coastal flavors from seaweeds and clams, to salmon and fir needles. A smattering of recipes are drawn from my new book, "Pacific Harvest," too!! Students at Seattle Culinary Academy (SCA) will prepare and serve the dishes at SCA's ONE WORLD RESTAURANT. I (Jennifer) will share a lively slide talk exploring the rich interconnection of our coastal ecosystems and cultures, based on 40 years of foraging from California to Alaska.
Plus, enjoy wine and pours from Finnriver Farm & Cidery and a Raffle for a northwest-themed ceramic bowl from Chris Moench's studio "Axis of Hope," signed books, and yummy gift baskets including Finnriver Farm & Cidery and Lummi Island Seagreens products. About Chef Kären Jurgensen Chef Kären Jurgensen is the Executive Chef Instructor at Seattle Culinary Academy, where she oversees One World Dining Room. She developed the school’s sustainability curriculum and was honored with the prestigious Lifetime Learner Award by the Seattle Colleges Board of Trustees. Each summer, Chef Kären teaches at Quillisascut Farm School, leading farm-to-table immersion courses for professional chefs, culinary students, agricultural professionals, and food writers. Cooking only with ingredients they find on the farm, students learn to be connected to the food they work with. Chef Kären is the co-author of two mmmmmarvelous books: "Rethinking the Kitchen: The sustainable kitchen handbook" and "Chefs on the Farm cookbook: Recipes and Inspiration from the Quillisascut Farm School of the Domestic Arts." Under Chef Kären's direction, the Seattle Culinary Academy became the first culinary school in the nation to implement a sustainable food systems course and integrate social justice initiatives throughout its program. The Academy was awarded the Slow Food Snail of Approval, recognizing its leadership in local and sustainable sourcing, environmental stewardship, and community engagement.
About Jennifer Hahn Jennifer wears many hats — educator, scientist, writer, adventurer, naturalist, culinary explorer, and wilderness guide. She teaches sustainable wild food harvesting at Fairhaven College of Interdisciplinary Studies at Western Washington University and leads seaweed workshops for the North Cascade Institute, Salish Sea tribes, and First Nations. During a 750-mile, two-summer solo kayak expedition from Alaska to Bellingham, she foraged sea vegetables, fish, sea urchin, berries, and wild roots to supplement her dry stores. In the 1990s, she founded her adventure travel and natural history company, Elakah Kayak Expeditions, where she began teaching popular wild foraging and cooking courses. Her seaweed workshops with Salish Sea Tribes and First Nations later inspired here graduate school research project on contaminants and beneficial chemicals in Salish Sea Seaweeds, now published in PLOS One.
Jennifer's first book, Spirited Waters: Soloing South through the Inside Passage, won the Barbara Savage Miles from Nowhere Award. Her love of foraging inspired her latest titles with Mountaineers Books, Pacific Feast and Pacific Harvest.

    SOOKE Bay, Vancouver Island, British Columbia

    Jennifer is embarking on a MA degree in Environmental Studies at Huxley College of the Environment, Western Washington University! She is researching contaminant levels in Salish Sea seaweeds. Working with Washington Tribes and British Columbia First Nations to select beach sites and harvest seaweeds, she is checking both "pop weed" (Fucus) and bull kelp (Nereocystis). The Salish Sea Seaweed Garden has been a source of food for 1000s of years. As people return to traditional foods, it is essential they know if the foods are contaminated by chemical pollutants. Stay tuned! Results will be analyzed in the Winter/Spring of 2016. Oceans of thanks to UC Davis/Sea Doc Society (the generous funders) and the Border Policy Research Institute at WWU (also a wonderful funder), and the many First Nation and Washington Tribes who have generously contributed scientists, boat drivers, boats and their vast knowledge of the Salish Sea! Raised kayak paddles to Shannon Point Marine Center and staff for their kind lab support and giant freezer!

    WILD EDIBLES FROM LAND TO SEA, LOPEZ IS, WA June 5-7, 2015

    EAT ON THE WILD SIDE!


    Here in Northwest Washington, where land meets the sea, lies a bountiful buffet of nourishing edibles. To experience a culinary sampling of both environments, we have planned a trip out to bucolic Lopez Island with two seasonal windows in mind: spring’s profusion of edible land plants and an extra-low tide for harvesting sea vegetables. We’ll spend half of each day exploring and harvesting around Spencer Spit State Park and the other cooking and eating a four-course wild feast complemented by local fish and produce.
    Our instructor Jennifer Hahn is the author of Pacific Feast: A Cook's Guide to West Coast Foraging and Cuisine, a delicious mix of essays on natural and cultural history of 50 wild edibles, 65 recipes from award-winning chefs, field notes, photos and illustrations and detailed sustainable harvesting guidelines.
    On Saturday, we’ll explore the “intertidal table” and identify, harvest and process delicious sea vegetables. You’ll learn culinary, medicinal and First Nation traditional uses of the most nutritious veggies on the planet. Sample kelp-robed salmon, sea bean sauté, sea veggie soup and chocolate ocean mousse pie—thickened with carrageenan-rich seaweed!
    On Sunday, we’ll head to the forest to identify edible plants and, where appropriate, sustainably harvest for cooking up curried nettle soup, wild greens pesto, Nootka rose vinaigrette salad and juniper truffles.

    Tuition includes includes two nights camping and two wildharvested dinners. Our base camp will be Group Camp Three at the amazing Spencer Spit State Park with plenty of campsites, an inviting fire pit, salmon grill and all-weather shelter with picnic tables and electrical outlets. If you prefer not to camp, “Lopez Farm Cottages” is an option on the Island. Dinners are provided but participants will need to bring their own breakfasts and lunches. Participants will need to bring their own camping gear, but please let us know if you need to borrow any gear and we will accommodate.
